Pomegranate & Citrus Salad

Servings: 4-6

Ingredients:

  • 1 large pomegranate, arils removed
  • 2 oranges, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • 1/4 cup fresh mint leaves, chopped
  • 1 tablespoon honey (optional)
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil
  • A pinch of sea salt (optional)

Instructions:

First, remove the arils arils from the pomegranate. In order to do this, cut the pomegranate in half and tap the back of each half with a wooden spoon to release the arils into a bowl.

Then peel and segment the oranges and grapefruit, cutting away any pith and ensuring the segments are free of seeds.

In a large bowl, combine the pomegranate arils, orange segments, grapefruit segments, and fresh chopped mint leaves.

In a small bowl, whisk together the honey (if using), lime juice, olive oil, and a pinch of sea salt.

Pour the dressing over the fruit mixture and toss gently to combine.

Serve immediately, garnished with additional mint leaves if desired. Enjoy!
